Chess Tarts

A bite-sized version of this classic southern pie.

30 minutes to prepare, 25 minutes to cook

Combine butter, sugar, and vinegar into a saucepan. Heat slowly until it bubbles. Stir occasionally to keep the suger from crystallizing.

Add this mixture slowly to the eggs, vanilla, and salt, and beat very well. Pour into 8 tart shells and bake at 350 deg. F for 25 minutes.

If making a pie instead, pour into pie crust and bake for 40 minutes.
