Gingerbread Cake

A spicy cake, which Mama usually served with a Lemon Sauce.

Ingredients

• 1 cup Molasses
• 1/4 cup Sugar
• 1/4 cup (1/2 stick) Butter or Margarine melted
• 1 Egg well beaten
• 1 2/3 cup Flour all purpose
• 1/2 tsp. Baking Powder
• 1/2 tsp. Salt
• 1 tsp. Ginger ground
• 2 tsp. Cinnamon ground
• 1 tsp. Cloves ground
• 1 tsp. Baking Soda
• 1/2 cup Water boiling

Directions

Mix together the molasses, sugar, butter and eggs.

Sift in the flour, baking powder, and salt. Set aside.

Mix together the ginger, cinnamon, cloves, baking soda, and boiling water. Add this to the sugar and flour mixture. Pour into a greased cake pan.

Bake in 350 deg F oven until a toothpick inserted comes out clean.
