Cucumber Salad

If the cucumbers have been waxed, peel them. Otherwise, peel the cucumber in alternating lengthwise strips. Place the cucumber between two chopsticks and slice thinly. The chopsticks will prevent the knife from completely separating the slices.

Sprinkle the cucumber lightly with salt, let sit for ten minutes, then rinse. Be careful not to break them.

Mix together the vinegar, soy sauce, and sugar until the sugar is dissolved. Pour over the cucumbers and allow them to marinate for twenty minutes.

Drain from marinade and serve.
