Raisin Oatmeal Cookies

Using a mixer, beat butter until creamy. Add shortening, both sugars and spices and beat for another couple of minutes. Beat in egg.

If using self-rising flour, omit the baking soda, baking powder, and salt.

Add the flour, the oats, and the raisins, and mix well.

You can add 1/2 to one cup of chocolate chips or nuts to the mix as well.

Drop by rounded teaspoons about 2 inches (5 cm) apart on an ungreased cookie sheet lined with parchment paper.

Parchment paper is optional with this recipe, but it makes cleanup and pan juggling easier.

Bake in 375 deg F oven until light brown, about 10 minutes. Transfer to racks immediately to cool.

Stores up to two weeks in an airtight container.
